Instructions

  1. Preheat the oven to 200 F and prepare an ovenproof platter.

  2. Whisk together matzo cake meal, tapioca starch, sugar, and baking powder in a large bowl.

  3. Add milk, eggs, melted butter, and vanilla to the dry ingredients; whisk until the batter is smooth.

  4. Heat and grease a large skillet over medium-high heat.

  5. Drop batter by 2-3 tablespoonfuls into the skillet, cooking 3-4 pancakes at a time for 1-2 minutes per side until golden brown and set.

  6. Transfer cooked pancakes to the warm platter, cover with foil, and keep warm in the oven while preparing the remaining batter.

  7. Serve warm with desired toppings.
