Preheat the oven to 200 F and prepare an ovenproof platter.

Whisk together matzo cake meal, tapioca starch, sugar, and baking powder in a large bowl.

Add milk, eggs, melted butter, and vanilla to the dry ingredients; whisk until the batter is smooth.

Heat and grease a large skillet over medium-high heat.

Drop batter by 2-3 tablespoonfuls into the skillet, cooking 3-4 pancakes at a time for 1-2 minutes per side until golden brown and set.
