Passionfruit Butter (Curd)

Instructions

  1. Start boiling water in a saucepan over medium heat, placing a heatproof bowl over it to create a double boiler without the bowl touching the water.

  2. Reduce heat to medium-low, then add butter and sugar to the bowl and stir to melt.

  3. Combine passionfruit pulp, lemon juice, and eggs in a separate bowl, then add this mixture to the butter and sugar.

  4. Continuously stir the mixture over medium-low heat for 10 to 20 minutes until it thickens and coats the back of a spoon.

  5. Remove the bowl from heat and allow the passionfruit butter to cool completely before spooning it into a sterilized airtight jar for refrigeration.
