Instructions

  1. Halve passion fruits and scrape pulp and seeds into a saucepan.

  2. Heat the pulp over medium-low heat, stirring frequently, until nearly boiling; then remove from heat.

  3. Strain the pulp through a fine sieve, discard the seeds, and cool the juice.

  4. Combine passion fruit juice, olive oil, lime juice, vinegar, honey, and salt in a blender or food processor; blend until smooth.

  5. Store the dressing refrigerated for up to one week; shake or stir before serving.
