Party Hedgehog - Mettigel - Raw Pork Hedgehog
A festive party centerpiece, the Pork Hedgehog (Mettigel), features seasoned raw ground pork shaped into a hedgehog and served with bread or rolls.

Trim fat from a pork roast, then freeze the pieces for one hour until firm.

Pre-cool grinder components and use a large plate to grind the pork, collecting it in a chilled bowl.

Season the ground meat with 1 teaspoon salt and pepper; optional additions include garlic or caraway.

On a platter, form the seasoned meat into one large rounded body and a smaller pointed oval for the face.

Cut an onion into lengthwise slivers and insert them into the body, creating rows of 'spikes'.

Decorate the face with olives for eyes and a nose, using toothpicks to secure them if necessary.

Keep the Mettigel chilled throughout the party and serve with bread, rolls, additional onion, and mustard.
