Party Hedgehog - Mettigel - Raw Pork Hedgehog

Instructions

  1. Trim fat from a pork roast, then freeze the pieces for one hour until firm.

  2. Pre-cool grinder components and use a large plate to grind the pork, collecting it in a chilled bowl.

  3. Season the ground meat with 1 teaspoon salt and pepper; optional additions include garlic or caraway.

  4. On a platter, form the seasoned meat into one large rounded body and a smaller pointed oval for the face.

  5. Cut an onion into lengthwise slivers and insert them into the body, creating rows of 'spikes'.

  6. Decorate the face with olives for eyes and a nose, using toothpicks to secure them if necessary.

  7. Keep the Mettigel chilled throughout the party and serve with bread, rolls, additional onion, and mustard.
