Preheat the oven to 350 degrees F and lightly grease a shallow baking dish.

Wash mushrooms, remove stems, and set caps aside; finely chop the stems.

Melt butter in a skillet over medium heat, then sauté chopped onion and mushroom stems for 3 minutes until softened.

Stir in chopped artichokes and roasted red bell pepper, cook until hot, then add breadcrumbs and garlic and herb cheese spread, cooking until well blended.

Arrange mushroom caps in the dish, fill with the mixture, top with Parmesan cheese, and bake for approximately 15 minutes until browned.
