Parsi Chicken Farcha (Parsi-Style Indian Fried Chicken)

Instructions

  1. Heat cooking oil in a deep pan over medium heat, taking care not to let it get too hot.

  2. In a nonmetallic bowl, combine chicken with lemon juice, garlic, ginger, red chili powder, garam masala, pepper, and salt, mixing thoroughly. Cover and refrigerate for at least 30 minutes, or preferably overnight, to marinate.

  3. Place breadcrumbs on a flat plate. In a separate bowl, whisk eggs, then mix in salt, black pepper, and a pinch of red chili powder.

  4. Remove marinated chicken from the refrigerator. Coat each piece first in breadcrumbs, then dip in the egg mixture, and carefully place into the hot oil.

  5. Fry chicken pieces, turning occasionally, until golden on the outside. Do not overcrowd the pan. Remove with a slotted spoon and drain on paper towels; the chicken will not be very crispy.
