Instructions

  1. Preheat the oven to 350 F and butter a 9x13x2-inch baking pan.

  2. Combine biscuit mix, parsley, oregano, black pepper, salt, and garlic powder in a large bowl.

  3. In a separate bowl, whisk eggs, then whisk in vegetable oil and Parmesan cheese.

  4. Add the wet mixture to the dry ingredients, then fold in zucchini and onion until just combined.

  5. Pour the mixture into the prepared pan.

  6. Bake for 30 minutes, or until lightly browned.

  7. Cool slightly, then cut into squares and serve.
