Parmesan Smashed Carrots

Instructions

  1. Preheat the oven to 400 F and line a baking sheet with parchment paper.

  2. Steam 1 pound (40) baby carrots for 10-12 minutes until tender.

  3. Arrange steamed carrots on the prepared baking sheet and smash each to 1/4-inch thickness.

  4. Drizzle carrots with 2 1/2 tablespoons olive oil, then season with 1/4 teaspoon salt, 1/2 teaspoon garlic powder, and 1/2 teaspoon nutmeg (optional).

  5. Evenly spread 3/4 cup grated parmesan cheese over each carrot.

  6. Roast for 25 minutes, or until crispy and golden brown.

  7. Remove from oven, garnish immediately with parsley, and serve.
