Parmesan Roast Pork

Instructions

  1. Preheat the oven to 375 F.

  2. Combine olive oil, thyme, chicken broth, salt, and pepper in a small bowl. Coat pork in this mixture, then roll it in both types of Parmesan cheese.

  3. Place the coated pork on a roasting pan and sprinkle with any leftover cheese.

  4. Roast, uncovered, for 40-50 minutes, or until the internal temperature reaches at least 145 F.

  5. Remove pork, cover, and rest for 10 minutes before slicing.
