Instructions

  1. Start simmering water and milk in a saucepan over medium-low heat.

  2. Gradually whisk in polenta and a pinch of salt, stirring frequently for 20 minutes until the polenta is no longer gritty.

  3. Stir in 1/4 cup ricotta and Parmesan cheese until melted.

  4. Chiffonade basil by stacking and rolling leaves tightly, then cutting into thin shreds.

  5. Spoon polenta onto plates, topping each serving with a dollop of ricotta and a sprinkle of basil.
