Papas Rellenas - Stuffed Potato Balls
A popular Caribbean street food, these fried potato balls are stuffed with seasoned ground beef.

Instructions

Heat 2 inches of oil in a pot to 370 F for deep frying.

Combine hot mashed potatoes, eggs, butter, and 2 teaspoons of cornstarch; let cool.

Heat olive oil in a pan, cook ground beef until no longer pink (6-8 minutes).

Add sofrito, tomato sauce, oregano, and salt to the beef; simmer on low for 10-15 minutes, then cool.

Dust hands with cornstarch. Spread potato dough in palm, make an indentation, and stuff with the meat mixture.

Cover the filling with potato dough, shape into a ball, and lightly dust with cornstarch.

Repeat for remaining mixture.

Deep fry the stuffed potato balls until golden, 6-8 minutes.

Remove and drain on paper towels.
