Papas Arrugadas (Wrinkled Potatoes)

Instructions

  1. Start boiling 2 1/2 pounds (1.25 kilograms) small, washed potatoes in a large pot with water to just cover them and 2 tablespoons coarse sea salt.

  2. Boil the potatoes for 15 to 20 minutes until tender.

  3. Drain the water, then return the pot to the stove over low heat to evaporate remaining moisture and form a salt layer on the skins.

  4. Serve the hot potatoes with red pepper or cilantro green sauce.
