Instructions
-
Blanch and grind almonds into a fine dust.
-
Peel, quarter, and boil a potato until cooked, then mash it.
-
Combine sugar and 1/2 cup water in a saucepan, stir to dissolve, and bring to a boil over medium heat. Add 3-4 drops of lemon juice, then simmer until a thick syrup forms.
-
Remove syrup from heat, then gradually stir in ground almonds, mashed potato, and grated lemon peel. Cool to room temperature, cover, and refrigerate overnight.
-
Preheat oven to 380F. Grease cookie sheets.
-
Spoon out dough, roll into small balls, then roll them in powdered cocoa or pine nuts. If using pine nuts, brush each ball with egg white.
-
To flavor a portion of dough, knead in instant coffee flakes, candied fruit, or cinnamon before shaping.
-
Place shaped balls on greased cookie sheets and bake for approximately 4 minutes, or until pine nuts brown. Remove immediately.
