Panellets (Catalan Almond Sweets) Recipe

A traditional Catalan sweet, Panellets are prepared for Dia de Todos Los Santos and typically served with Moscatel or cava.

Instructions

  1. Blanch and grind almonds into a fine dust.

  2. Peel, quarter, and boil a potato until cooked, then mash it.

  3. Combine sugar and 1/2 cup water in a saucepan, stir to dissolve, and bring to a boil over medium heat. Add 3-4 drops of lemon juice, then simmer until a thick syrup forms.

  4. Remove syrup from heat, then gradually stir in ground almonds, mashed potato, and grated lemon peel. Cool to room temperature, cover, and refrigerate overnight.

  5. Preheat oven to 380F. Grease cookie sheets.

  6. Spoon out dough, roll into small balls, then roll them in powdered cocoa or pine nuts. If using pine nuts, brush each ball with egg white.

  7. To flavor a portion of dough, knead in instant coffee flakes, candied fruit, or cinnamon before shaping.

  8. Place shaped balls on greased cookie sheets and bake for approximately 4 minutes, or until pine nuts brown. Remove immediately.
