Instructions

  1. Pat scallops thoroughly dry and season with salt.

  2. Heat grapeseed oil in a nonstick or cast-iron pan over high heat.

  3. Add scallops to the hot pan, shake once, and cook for 2 to 3 minutes until browned.

  4. Flip scallops and cook for an additional 1 to 2 minutes until just translucent and springy; transfer to a paper-towel-lined plate.

  5. Brown butter in the same pan over medium heat, then pour it over the cooked scallops and serve immediately.
