Instructions

  1. Pat salmon dry, optionally let sit at room temperature for up to 30 minutes, then season both sides with salt and pepper.

  2. Heat oil in a heavy skillet over medium heat until shimmering.

  3. Sear salmon skin-side down for 4 to 5 minutes, until browned and it releases easily.

  4. Flip the fillets and cook for 1 to 2 minutes more, reaching an internal temperature of 125 F.

  5. Transfer salmon to a plate, rest for 5 minutes, and serve with lemon wedges.
