Instructions

  1. Remove the abalone from its shell, discard the viscera and rubbery lip, then clean any black material from the edges.

  2. Thinly slice the cleaned abalone and pound each piece gently until tender.

  3. Combine flour, salt, and pepper in a bowl or bag, then dredge the abalone slices, shaking off excess.

  4. Melt butter and oil in a large frying pan over medium-high heat.

  5. Cook floured abalone slices in a single layer for 2 to 3 minutes per side until golden.

  6. Repeat for any remaining slices and serve hot.
