Palaver Sauce Recipe

Palaver sauce is a West African spinach stew featuring melon seeds, meat, and fish.

Instructions

  1. Finely chop onions, crush garlic, and grate fresh ginger.

  2. Heat 1-2 tablespoons of palm oil in a pot; fry onions, ginger, and garlic until browned.

  3. Add diced steak; brown for a few minutes.

  4. Stir in chopped tomatoes and scotch bonnet pepper, adding the pepper whole if less heat is desired.

  5. Mix 0.5 cup agushie powder with water to form a paste; set aside.

  6. After 5-7 minutes, once tomatoes begin to break down, pour in the agushie paste without stirring.

  7. Cover and simmer on low-medium heat for 20 minutes.

  8. Uncover after 20 minutes, break apart the cooked agushie cake, and stir into the stew.

  9. Add fish, then spinach; simmer for 10 minutes.

  10. Check seasoning before serving.
