Trim spinach stems, wash thoroughly, drain, and coarsely chop.

Heat oil in a deep pan over medium heat. Add cumin seeds and dry red chile bits; cook until cumin stops spluttering.

Add garlic; fry until pale golden. Then add onion and fry until soft.

Stir in chopped spinach; cook uncovered until slightly wilted.

Mix in red chili powder, turmeric powder, raw mango powder, and salt. Continue cooking for 3-4 minutes, then turn off heat.
