Instructions

  1. Prepare all vegetables and meat as listed.

  2. Warm broth over medium-low heat.

  3. For seafood or mixta, clean squid, remove tentacles, cut tubes into rings, and rinse all shellfish.

  4. Heat olive oil in a paella or frying pan over medium heat.

  5. Sauté onions, garlic, and tomatoes until onions are translucent.

  6. For mixta, brown chicken and pork loin, then add squid and cook 10-15 minutes, stirring.

  7. For seafood, add squid and cook 10-15 minutes, stirring.

  8. For vegetarian, lightly sauté artichoke, eggplant, and bell pepper until firm.

  9. Sprinkle rice into the pan and stir for 2-3 minutes to coat with oil.

  10. Crush saffron into the warm broth, then slowly pour broth into the pan until ingredients are covered, spreading meat and vegetables evenly.

  11. For mixta and seafood, arrange mussels, clams, and shrimp evenly, then add pepper slices.

  12. Simmer uncovered for 20 minutes, adding more broth if needed until rice is tender; sprinkle peas or add white beans (for vegetarian) when rice is almost cooked.

  13. Season with salt, remove from heat, cover, and rest for 5 minutes before serving with lemon wedges.
