Pad Thai Gai: Thai Stir-Fried Noodles With Chicken Recipe

Instructions

Boil rice noodles to a firm al dente, avoiding overcooking.

Drain and rinse noodles with cold water to prevent sticking.

Combine all stir-fry sauce ingredients. Marinate chopped chicken with 2 tablespoons of this sauce.

Heat a wok or large non-stick pan over medium-high heat with oil; stir-fry garlic for 1 minute.

Add chicken and stir-fry for 2 minutes. Incorporate carrots or cabbage, adding more sauce if the pan dries.

Push ingredients to one side, scramble an egg in the center, then mix with other ingredients.

Add noodles and 1/4 of the sauce, tossing for 30 seconds. Continue adding sauce in increments until most is used.

Add bean sprouts and stir-fry for 2 to 3 minutes.

Taste and adjust flavor with remaining sauce or extra fish sauce. Serve topped with chopped nuts, spring onion, fresh basil, and lime wedges.
