Pad Thai Gai: Thai Stir-Fried Noodles With Chicken Recipe

Instructions

  1. Boil rice noodles to a firm al dente, avoiding overcooking.

  2. Drain and rinse noodles with cold water to prevent sticking.

  3. Combine all stir-fry sauce ingredients. Marinate chopped chicken with 2 tablespoons of this sauce.

  4. Heat a wok or large non-stick pan over medium-high heat with oil; stir-fry garlic for 1 minute.

  5. Add chicken and stir-fry for 2 minutes. Incorporate carrots or cabbage, adding more sauce if the pan dries.

  6. Push ingredients to one side, scramble an egg in the center, then mix with other ingredients.

  7. Add noodles and 1/4 of the sauce, tossing for 30 seconds. Continue adding sauce in increments until most is used.

  8. Add bean sprouts and stir-fry for 2 to 3 minutes.

  9. Taste and adjust flavor with remaining sauce or extra fish sauce. Serve topped with chopped nuts, spring onion, fresh basil, and lime wedges.
