Pa Jun (Korean Pancake With Scallions)

Instructions

  1. In a medium bowl, mix flour, eggs, salt, scallions, and water until the batter is slightly thinner than traditional American pancake batter; let rest for 10 minutes.

  2. Heat a medium nonstick skillet with oil over medium heat.

  3. Pour batter into the skillet to form a thin layer.

  4. Cook for 3 to 4 minutes until the bottom is golden brown and set.

  5. Flip the pancake and cook for an additional 2 to 3 minutes.

  6. Serve with soy sauce or a spicy dipping sauce.
