Oyster Fritters Recipe

Crispy oyster fritters, encased in a thick batter and deep-fried, make an excellent snack or appetizer.

Instructions

  1. Heat 1-2 inches of oil in a deep skillet to 365 F.

  2. Whisk eggs and milk in a small bowl.

  3. In a separate bowl, combine flour, baking powder, and salt; then blend in the egg and milk mixture until smooth.

  4. Stir chopped oysters into the batter.

  5. Drop spoonfuls of batter into the hot oil.

  6. Cook fritters in batches, turning to brown both sides, then drain on paper towels.
