Instructions

  1. Preheat the oven to 200 F (or lowest setting possible) for drying tomatoes.

  2. Core and halve tomatoes lengthwise.

  3. Gently squeeze halves to remove liquid and seeds.

  4. Make a small slit in the skin side of each half.

  5. Arrange tomatoes cut-side up in a single layer on a drying rack set on a foil-lined baking sheet, ensuring space between each.

  6. Lightly sprinkle tomatoes with salt.

  7. Bake for 6-12 hours until leathery and chewy, checking hourly. Cool before using.
