Oven Roasted Pulled Pork

Instructions

  1. Preheat the oven to 215 F. Pat the pork dry, trim excess fat, then thoroughly coat it with the mixed rub ingredients.

  2. Place the pork, fat side up, into a large Dutch oven. Combine 1/3 cup water and liquid smoke in a ramekin, then place it next to the pork in the Dutch oven. Cover tightly.

  3. Roast for 12 hours or until fork-tender (approximately 200 F internal temperature). Turn off the oven and let the pork rest for 1 hour before removing.

  4. Transfer the pork to a cutting board, shred it using forks, and adjust seasoning to taste.

  5. Serve warm on soft rolls with barbecue sauce.
