Instructions

  1. Preheat the oven to 375 F.

  2. Place a lightly oiled 12-inch cast-iron skillet over medium-high heat.

  3. Rub 4 bone-in loin pork chops (about 3/4 inch thick) with 1 tablespoon olive oil, then season with 1 teaspoon kosher salt, 1/2 teaspoon freshly ground black pepper, and optional 1 teaspoon garlic powder and 1/2 teaspoon dried thyme.

  4. Sear the chops in the hot skillet for 3 to 4 minutes per side until browned.

  5. Transfer the skillet to the preheated oven and roast for 6 to 8 minutes, or until the internal temperature reaches at least 145 F.
