Oven-Roasted Pork Belly Recipe with Perfect Crackling

Instructions

  1. Preheat the oven to 350 F (180 C).

  2. Place a rack on a rimmed baking sheet.

  3. Score the skin of 2 pounds of pork belly 1/4 to 1/2-inch apart, cutting through the skin and fat but not into the meat.

  4. Season the pork all over with 3/4 teaspoon kosher salt and 1/2 teaspoon black pepper, then drizzle with 1 to 2 tablespoons olive oil and rub it in.

  5. Position the pork on the rack, skin-side up.

  6. Roast for 2 to 2 1/2 hours until the meat is very tender.

  7. Increase the oven temperature to 425 F and continue roasting for an additional 20 to 25 minutes to crisp the skin.

  8. Remove the pork and let it rest for 10 minutes before slicing thinly along the score marks.
