Instructions

  1. Preheat the oven to 400 F.

  2. On a rimmed baking pan, arrange chopped sweet potatoes, cauliflower, and Brussels sprouts in a single layer.

  3. In a small microwavable bowl, combine and melt butter or vegan margarine, maple syrup, salt, and pepper; stir to mix.

  4. Immediately pour the warm glaze over the vegetables and toss to coat thoroughly.

  5. Bake for approximately 40 minutes until tender, stirring halfway through the cooking time.
