Oven-Roasted Mixed Vegetables With a Maple Glaze

On a rimmed baking pan, arrange chopped sweet potatoes, cauliflower, and Brussels sprouts in a single layer.

In a small microwavable bowl, combine and melt butter or vegan margarine, maple syrup, salt, and pepper; stir to mix.

Immediately pour the warm glaze over the vegetables and toss to coat thoroughly.
