Oven-Roasted Chicken With Pepper Jelly Glaze

Instructions

  1. Preheat oven to 425 F.

  2. Line a baking pan, then trim, pat dry, and season the chicken breasts. Arrange them in the pan and bake for 20 minutes.

  3. While chicken bakes, combine pepper jelly, butter, mustard, and pepper in a saucepan and heat until blended.

  4. Brush chicken with half the jelly mixture and return to the oven for 10 more minutes, or until the internal temperature reaches 165 F.

  5. Apply the remaining jelly mixture a few minutes before the chicken is fully cooked.
