Oven Pulled Pork Barbecue

A tender, seasoned pork shoulder is slow-roasted, then shredded and combined with a flavorful barbecue sauce.

Instructions

  1. Preheat oven to 450 F.

  2. Combine salt, pepper, chili powder, garlic powder, onion powder, and ground mustard. Rub this spice blend onto the pork shoulder in a roasting pan.

  3. Roast pork for 1 hour, then remove from oven.

  4. Reduce oven to 325 F. Pour apple juice and sprinkle chopped garlic over the pork. Cover pan tightly with foil and roast for 2 to 2 1/2 hours until tender enough to shred.

  5. Meanwhile, combine ketchup, apple cider vinegar, Worcestershire sauce, onion, brown sugar, ground mustard, and garlic powder in a saucepan for the barbecue sauce. Bring to a boil, stirring, then simmer uncovered for 15 minutes until thickened.

  6. Remove pork from roasting liquid, shred, and serve with the prepared barbecue sauce. Optionally, mix 1 cup of sauce into the shredded pork.
