Instructions

  1. Preheat the oven to 425 F.

  2. Drizzle 1 tablespoon of olive oil onto a baking sheet.

  3. Wash, trim, and slice zucchini into 1/2-inch thick rounds.

  4. Beat an egg in a small bowl.

  5. In a shallow dish, combine breadcrumbs with Parmesan cheese, salt, basil, and pepper.

  6. Dip zucchini slices into the beaten egg, then press into the breadcrumb mixture to coat both sides; shake off excess.

  7. Place the coated rounds on the prepared baking sheet, repeating for all zucchini slices.

  8. Drizzle the remaining 1 tablespoon of olive oil over the zucchini.

  9. Bake for 8 minutes, then flip the zucchini with tongs and bake another 5 to 7 minutes until golden brown.

  10. Cool zucchini on the pan for 2 minutes, then serve hot.
