Oven-Fried Pesto Chicken

Instructions

  1. Preheat the oven to 400 F and lightly grease a baking pan.

  2. Pound chicken breasts to an even thickness, or slice large breasts horizontally into cutlets.

  3. Combine panko, dry breadcrumbs, Parmesan (if using), paprika, salt, and pepper in a food processor or bowl until well mixed.

  4. Rub each chicken breast with 1 to 2 teaspoons of pesto, then thoroughly coat with the crumb mixture.

  5. Arrange the chicken in the prepared pan and bake for about 20 minutes, or until cooked through.
