Oven-dried tomatoes offer a simple method to preserve summer tomatoes, creating a sweet and chewy snack or ingredient without needing actual sunlight.

Preheat the oven to 200 F.

Rinse and thoroughly dry the tomatoes.

Hull and remove seeds and juice from each tomato.

Cut small tomatoes into quarters; larger ones into bite-size pieces.

Toss tomato pieces with olive oil and optional seasonings in a large bowl.

Arrange tomatoes on a wire rack set on a rimmed baking sheet, spacing them 1 inch apart.

Bake for 1 hour, then check every 30 minutes, removing when edges curl and size reduces by one-third (total 2-3 hours).

Cool at the plump-dry stage, or return to the oven for 3-4 additional hours for a chewier texture.
