Oven-Braised Rosemary Chicken Legs

Braised chicken legs or thighs are prepared with rosemary and a savory wine sauce.

Instructions

  1. Preheat the oven to 325 F.

  2. Heat olive oil in a large oven-safe pan over medium heat. Cook onion for 3 minutes, then add garlic and cook for 2 more minutes. Remove onion and garlic to a plate.

  3. Season chicken with salt and pepper, dredge in flour, then brown for 5 minutes per side in the pan. Return the onion and garlic to the pan.

  4. Whisk wine and tomato paste, then pour into the pan with the bay leaf. Boil for 1.5 to 2 minutes until reduced by half. Add chicken broth and rosemary sprigs.

  5. Cover and braise in the oven for 1 hour, or until chicken is tender and reaches 165 F internal temperature.
