Oven-Braised Country Style Pork Ribs With Apple Cider

Preheat oven to 300 F (150 C).

Season pork ribs with salt and pepper.

Heat 2 tablespoons olive oil in a Dutch oven over medium heat; sear ribs in batches until browned, then set aside.

Add 1 tablespoon olive oil to the pan; sauté onion, carrot, and celery until translucent, then add garlic and cook for 1-2 minutes.

Return ribs to the pan. Combine cider, vinegar, chicken broth, and tomato paste; pour over ribs. Add bay leaves and thyme.

Cover and bake for 3 hours, or until very tender.

Skim fat from juices, remove bay leaves, and adjust seasoning.

Serve ribs with vegetables and juices. To thicken juices, whisk 1.5 tablespoons flour with 2 tablespoons cold water, bring skimmed juices to a simmer, then stir in flour mixture and cook until thickened.
