Instructions
-
Preheat oven to 250 F. Combine garlic powder, brown sugar, salt, pepper, cayenne, onion powder, cumin, paprika, and chili in a bowl and stir.
-
Dry the ribs well, then evenly rub the spice mixture into the meat.
-
Line a large baking dish with heavy-duty foil, add chopped onion, and arrange the seasoned ribs on top.
-
Cover the dish tightly with foil and cook in the oven for two hours without opening.
-
Remove the dish, drain the collected liquid into a heatproof bowl, and set aside.
-
Pour 1/2 cup barbecue sauce over the ribs, spread evenly, recover the dish, and return to the oven for another two hours.
-
Remove the dish and increase oven temperature to 350 F.
-
Uncover the ribs, drain any additional liquid into the reserved bowl, and brush the remaining barbecue sauce onto the ribs.
-
Bake uncovered for 10 minutes to caramelize the sauce without drying out the ribs.
-
Meanwhile, strain the reserved liquid through cheesecloth, then cover and refrigerate overnight.
