Oven Braised Bottom Round Pot Roast

Instructions

  1. Preheat oven to 325 F. Rub beef with garlic, salt, and pepper.

  2. In a Dutch oven, cook bacon and onion until soft, then remove.

  3. Sear beef in the same pot until browned on all sides.

  4. Return bacon and onion to the pot, then add apple juice, beef broth, and vinegar.

  5. Cover and bake for 2.5 to 3 hours, or until very tender.

  6. Let the roast rest for 15 minutes before serving.
