Oven Beef Jerky

Flavorful beef jerky can be easily prepared at home using a conventional oven without the need for a dehydrator.

Instructions

  1. Preheat the oven to 250 F and place a baking rack in a jellyroll pan.

  2. Freeze beef for 30 to 60 minutes until firm.

  3. Trim fat from beef, then slice across the grain into 1/8- to 1/4-inch thick, 1- to 1 1/2-inch wide, and 4- to 10-inch long strips; optionally, flatten with a rolling pin.

  4. Combine liquid smoke, soy sauce, Worcestershire sauce, salt, pepper, garlic powder, onion powder, and cayenne pepper in a large zip-top bag.

  5. Add beef strips to the bag, coat thoroughly, remove air, seal, and refrigerate for 12 hours or overnight.

  6. Drain beef strips from marinade and pat very dry with paper towels.

  7. Arrange dried beef strips in a single layer on the prepared baking rack, ensuring space for air circulation.

  8. Bake for about 4 hours, or until dry and bendable; check frequently as drying times vary.

  9. Remove jerky from oven, increase oven temperature to 275 F, then arrange strips on a clean rack on a baking sheet, close but not touching, and bake for an additional 10 minutes.

  10. Remove from oven, pat dry to remove moisture or oil, and cool completely.

  11. Store cooled jerky in airtight containers; vacuum sealing is optional.
