Oven Barbecued Pork Loin Roast

Instructions

  1. Preheat the oven to 325 F.

  2. Line a roasting pan with foil, place a rack, then set the pork roast on the rack.

  3. Roast for 25 to 30 minutes per pound (e.g., 2 to 2 1/2 hours for a 5-pound roast), until the internal temperature reaches at least 145 F.

  4. Concurrently, prepare the barbecue sauce: Heat butter or oil in a medium saucepan, then sauté the onion until translucent.

  5. Add all remaining sauce ingredients, mix well, and bring to a simmer.

  6. Reduce heat to low and simmer for 15 to 20 minutes until the sauce thickens and flavors concentrate.

  7. Baste the pork roast with the barbecue sauce during the last 30 to 45 minutes of roasting.

  8. Let the roast rest for 10 to 15 minutes before slicing.
