Spread diced bread on a baking sheet; bake for 10 minutes, shaking midway, until lightly golden. Let cool.

Melt butter in a saucepan; sauté onion and celery until translucent, then let cool.

In a large bowl, combine the cooled toasted bread, chopped herbs, cooled sautéed vegetables, and any nuts or fruit. Toss to combine.
