Instructions

  1. If baking, preheat the oven to 425 F.

  2. Mash beans with hot sauce and salt, incorporating optional salsa or enchilada sauce.

  3. Soften corn tortillas by microwaving them until pliable.

  4. Spread 1 to 2 tablespoons of bean mixture in a line on each tortilla, then sprinkle with 1.5 teaspoons of shredded cheese.

  5. Roll the tortillas tightly, starting from the filling end.
