Instructions

  1. Preheat the oven to 425 F.

  2. Line a rimmed baking sheet with foil or parchment paper and spray it with nonstick cooking spray.

  3. Cut 1 1/2 pounds fish fillets into 6-ounce portions and sprinkle both sides with salt and pepper.

  4. Prepare three bowls: combine 1 cup panko and 2 tablespoons parsley in the first; place 1/4 cup all-purpose flour in the second; whisk 2 eggs, 1 teaspoon Cajun seasoning, and 2 tablespoons mayonnaise in the third.

  5. Dip each fish fillet in the flour, then in the egg mixture, and finally coat with the panko mixture, pressing lightly to adhere.

  6. Arrange the coated fish on the prepared baking sheet.

  7. Bake for 16 to 20 minutes, or until the fish flakes easily, adjusting time based on thickness. Serve with lemon wedges and a preferred sauce.
