Instructions

  1. Combine lemon juice and garlic in a jar; let sit for 5 minutes.

  2. Add oil, mustard, salt, and pepper to the jar, then shake until emulsified; taste and adjust.

  3. In a large bowl, combine spring mix, arugula, radishes, and cucumber.

  4. Add enough dressing to lightly coat the salad, then toss thoroughly.

  5. Sprinkle with pumpkin seeds and chives or parsley, serving immediately with any remaining dressing.
