Orecchiette with Sausage and Broccoli Rabe
A simple pasta supper features orecchiette with a chunky sauce of Italian sausage, zesty broccoli rabe, chile flakes, and Pecorino Romano cheese.

Start boiling a large pot of salted water.

In a large skillet over medium heat, cook small pieces of sausage in oil for 4 minutes until browned.

Reduce heat to low, then add garlic and chile flakes, stirring for 1 minute until fragrant. Cover and remove from heat.

Add broccoli rabe to the boiling water and cook for 3 minutes until wilted and crisp-tender.

Remove broccoli rabe, drain, rinse with cold water, and squeeze dry.

Add the dried broccoli rabe to the sausage mixture. Cover the pan and return it to low heat.

Return the water to a boil and cook the orecchiette pasta until al dente. Drain, reserving 3/4 cup of pasta water.

Combine the drained pasta with the sausage mixture. Stir in enough reserved pasta water to lightly coat, then mix in the cheese, salt, and pepper. Serve.
