Orange Zest Banana Bread

Instructions

  1. Preheat the oven to 325 F and grease and flour a 5x9x3-inch loaf pan.

  2. Sift together flour, baking powder, salt, and baking soda.

  3. Beat butter with sugar for 2 to 3 minutes until fluffy, then beat in eggs one at a time.

  4. Alternate stirring the sifted flour mixture and mashed bananas into the wet ingredients.

  5. Fold in pecans or walnuts and orange zest or vanilla.

  6. Pour batter into the prepared pan and bake for 1 hour and 20 minutes, or until a wooden toothpick inserted into the center comes out clean.

  7. Cool in the pan for 10 minutes, then transfer to a rack to cool completely.
