Instructions

  1. Preheat oven to 375 F.

  2. Arrange chicken thighs in a greased, lined baking dish. Brush with olive oil, then season with salt and pepper.

  3. Bake for 20 minutes.

  4. While chicken bakes, heat 1 tablespoon olive oil in a saucepan over medium heat; sauté onion until softened.

  5. Stir in orange juice, thyme, rosemary, salt, pepper, soy sauce, and brown sugar; simmer for 5 minutes, stirring frequently.

  6. Divide the sauce into two equal portions.

  7. Brush half of the sauce onto the chicken thighs and bake for an additional 15-20 minutes, or until cooked.

  8. Bring the reserved sauce to a boil and reduce it into a syrupy glaze.

  9. Serve chicken hot with the glaze.
