One-Layer Frosted Carrot Cake

A simple single-layer carrot cake, baked in a 9-inch pan and finished with cream cheese frosting, can optionally include raisins or chopped dates.

Instructions

  1. Preheat oven to 325 F (165 C). Grease and flour an 8 or 9-inch square pan.

  2. In a large bowl, combine flour, sugar, baking powder, salt, cinnamon, oil, eggs, and vanilla; blend on low speed for 1 minute.

  3. Fold in carrots, nuts, and optional raisins or dates.

  4. Pour batter into the prepared pan and bake for 40 to 45 minutes, or until a wooden pick comes out clean.

  5. Cool the cake completely on a wire rack.

  6. For the frosting, beat cream cheese, water, and vanilla in a medium bowl, then gradually add confectioners' sugar until smooth.

  7. Spread frosting onto the cooled cake.
