Instructions

  1. Grease and flour a 1-pound coffee can or a 4-quart crock pot insert.

  2. In a large bowl, cream butter and sugar until fluffy, then mix in the egg.

  3. In a separate small bowl, whisk together flour, baking powder, and salt.

  4. Add the whisked dry ingredients, milk, and vanilla extract to the butter-sugar mixture, beating until well blended.

  5. Transfer the batter to the prepared coffee can or crock pot insert.

  6. Place the container in the crock pot, cover with two paper towels, and cook on high for 2 hours with the lid slightly ajar, or until a toothpick inserted into the center is clean.

  7. Allow the cake to remain in the crock pot for 10 minutes, then remove the container to a wire rack to cool for an additional 10 minutes.

  8. Unmold and cool completely, or serve warm, sliced, with optional toppings like whipped cream or ice cream.
