One-Dish Roasted Chicken Dinner With Potatoes and Carrots

Instructions

  1. Preheat oven to 425°F.

  2. Lightly oil a roasting pan.

  3. Combine 1 minced garlic clove with butter and pepper; rub this mixture under the chicken skin, then place chicken in the pan.

  4. Toss potatoes, carrots, and celery with olive oil and 3 minced garlic cloves, then arrange them around the chicken.

  5. Sprinkle salt and pepper over the chicken and vegetables; pour chicken broth into the pan.

  6. Roast for 1 1/4 to 1 1/2 hours, basting occasionally, until chicken reaches 165°F, adding more broth if needed.
