One-Dish Chicken and Rice Casserole

Instructions

  1. Preheat the oven to 375 F.

  2. Combine condensed soup, broth or water, rice, paprika, and black pepper in a bowl, then stir to blend.

  3. Lightly butter a shallow 2-quart baking dish and transfer the rice mixture into it.

  4. Place chicken breast halves on top of the rice mixture.

  5. Sprinkle the chicken with salt, paprika, and black pepper.

  6. Cover the casserole tightly with foil and bake for 45 to 65 minutes, until the chicken is thoroughly cooked to 165 F and the rice is tender.

  7. If desired, sprinkle with cheese and broil uncovered for 1 to 2 minutes until brown and bubbly.

  8. Garnish with chopped parsley and serve.
