Omurice: Japanese Fried Rice Omelet
Omurice is a classic Japanese dish featuring an omelet encircling fried rice, typically finished with a drizzle of ketchup.

Instructions

In a large skillet, heat vegetable oil and sauté chicken until golden.

Add onion, mushrooms, and green pepper; cook until softened.

Stir in steamed rice with salt and pepper, then cook briefly.

Remove from heat, mix in ketchup, and set the seasoned rice aside.

For each omurice, heat 1 teaspoon of vegetable oil in the skillet.

Pour two beaten eggs into the skillet to form a round omelet.

Place a quarter of the seasoned rice in the center of the omelet, then fold the sides over the rice.

Cover the pan with a plate and invert the omurice onto it; repeat to make four, then top with ketchup before serving.
